When you are tasked with creating a dessert bar/table and you only have a few hours to pull it off ....

I was hosting a baby shower for a friend several week ago and after months of planning and menu building and rebuilding and scrapping - I decided to create a dessert table as the the focal point of the event. Of course, that turned out to be the week from hell and everything that could and could not go wrong, went wrong.  

I found myself in the grocery aisle at 9 p.m. the night before the shower with no clue what was gonna be on the dessert table.

My brain was doing a mental run through of every recipe created or favorited till I got to this recipe and I knew it had to be one of the items on the dessert table - prep and cook time is less than an hour and I had just about everything I needed in my pantry. Stress lifted !

This is a different kind of macaroon - it less crunchy than traditional coconut macaroon - it is more like a cake. a very moist, coconutty cake. Because of the cake like texture of these macaroon , you need to add in flour and all the condensed milk the recipe call for. Plain white all-purpose flour will work great, but since I had coconut flour at home - I chose that for a richer coconutty flavor.

Ingredients

  • 1/2 cup coconut flour
  • 2 cups coconut flakes
  • 2 eggs
  • 3/4 cup sugar
  • 1/4 cup butter, softened
  • 1/2 teaspoon vanilla extract

How To

Preheat oven 350 F. Line a mini muffin tray.

In a large bowl, add butter and cream using a handmixer on low speed. Cream until butter is fluffy, add sugar and blend till you have light, fluffy texture. Continue mixing, then add eggs one at a time and beat until egg is fully combined. Add condensed milk and vanilla extract and mix until it is combined.

.Mix in the flour and add the desiccated coconut. Beat until the ingredients are combined.  Scoop mixture into lined muffin tins and bake for 17 to 20 minutes (or until top os golden). When it is baked, take out of oven and let it cool downn for a few minutes before serving.

This is a perfect after dinner treat. I like to have a few of these along with a cup of tea - #bliss.
