A few weeks ago I had one of those days - hungry but no desire to cook - so all day I nibbled on chips and veggies. By about 8:30 p.m., my body was done with little nibbles and demanded proper nourishment. On days like this, I let the content of my fridge dictate what I will be cooking. On this particular night, the only thing worthwhile in my refrigerator was some leftover cajun chicken. I also had some bread and cheese, so I decided to try my hands at a grilled cheese sandwich. This was my first attempt at a grilled cheese sandwich of any sort (sheesh - don't tell) and it turned out amazing - how did I go this long in life without trying a grilled cheese sandwich ? While I ponder the hows and whys - you should go try this recipe - you will thank me for it. 

What you need.

  • 1 grilled or baked chicken breast, cubed
  • 1/4 cup sour cream
  • 1 tablespoon finely diced cilantro
  • 1 tablespoon finely diced parsley
  • 1/8 cup of diced tomatoes
  • 1 tablespoon diced green onion
  • salt and pepper
  • 2 slices of bread
  • White cheddar cheese
  • mascaprone cheese

How to

Combine the first seven ingredients and toss together. Butter one side of each slice of bread and spread mascaprone cheese on the unbuttered side of each slice of bread.

Now time to build the sandwich:

With the buttered side down, layer the chicken/sour cream mixture on the side with mascaprone. Grate a generous amount of white cheddar cheese (or cheese of choice) on top of the chicken/sour cream mixture.

Place the other slice of bread (with the butter side face up) on the mixture

Heat a pan and grill - spray with some cooking spray, then add a knob of butter; Once butter is melted - place sandwich on the grill. Cook the sandwich for about 2 minutes on each side until golden and crisp.

Makes 2 wedges / 30 minutes
