During the summer, my church ladies group had a meet-up with a pot luck. I signed up to bring cake and I knew exactly which cake I was gonna make - my Lemon Infused Cake. I made it, it was perfect and just as I was leaving my apartment, I tripped on my own foot and half of it ended up on my kitchen floor.

It did not make it to my ladies group potluck, but good thing I took pictures because I get to share this amazing cake recipe with you - This is the easiest cake recipe - It is perfect for an after dinner offering with a cup of tea. 

This recipe makes two cake or one bundt cake.

What you need

  • 7 eggs
  • 2 sticks of butter
  • 1/3 cup cream
  • 1/2 cup yogurt
  • 2 lemons
  • 3 cups flour
  • 3 teaspoon baking powder
  • 1 1/2 cup of sugar , plus 1/2 cup 

How to

Preheat oven to 325 degrees, then line baking pans or bundt cake pan with butter. Then set aside. 

grate the rind from the lemons, squeeze out juice from the lemons and set aside.

In a mixer or mixing bowl, combine the lemon rind, 1 1/2 cup of sugar, yogurt, milk and eggs and whisk together. Then add in the flour, baking powder and juice from half a lemon, whisk until the ingredients are fully combined.  

Pour the mixture into the baking pans (or bundt pan) and let it bake for 30 to 40 minutes. 

While it is baking combine 1/2 cup of sugar and juice from 1 1/2 lemon. Once cake is baked, let it cool down for about 10 minutes, then poke hole in the cake and pour the juice suagr mixture into the holes.

Let it rest until cake is cooled before serving.
