My head has been buried in work and books the last month, I missed the beginning of football season. I love my sports, so this is my favorite time of the year. Between college football and the NFL - you've got football four days of the week. One of the best parts of football season is the tailgating and boy do they know how to tailgate in Louisiana.
This time of year always takes me back to my college days and time at LSU. Years removed from college, saturday night at Tiger stadium is still one of the best times and the amazing tailgate food was just the cherry on top. One of my favorite tailgate food is nachos. Living in the dorms, it was the easiest thing I could throw together for tailgate parties.
Nachos is one of those recipes that you can make to your taste - add what you like, take out what you don't, for a dish that is uniquely yours. My favorite way to serve nachos is with a louisiana twist with baked cajun chicken nachos as the star of the show, so when I was invited to a football watch party last weekend, I pulled out my nacho recipe and got to work.
What you need for
- Chicken Breast
- 1 1/2 teaspoon brown sugar
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- 1/2 teaspoon dried thyme
- 1/2 teaspoon oregano
- 1/2 garlic powder
- 1/2 red bell pepper
- 1/2 onions
- 1/2 avocado, cubed
- Cheddar cheese
- Chive infused sour cream
- blue corn tortilla chips
- green onions
Note: I like my chicken a bit dry, so I let it bake for the full 45 minutes - if you prefer moist chicken - bake for 30 to 35 minutes
Serves 3 to 4 / 1 hr 30 mins
Combine seasoning in a bowl. Then , dry rub the spice blend on the chicken, place in a bowl, cover and refrigerate for 30 minutes to an hour to marinate (if you can - marinate overnight)
Once marinated, place in a coated oven safe pan and bake for 30 to 45 minutes. Check constantly to make sure the chicken does not dry out.
Take out of over - let it cool. Then cube it.
To build the nachos - lay out the chips, sprinkle some of the cheese on top, add on some chive and sour cream dip
Click here for recipe for chive and sour cream dip. Simply put combine sour cream, chopped green onions, chive, salt and pepper. Whip together.
Then layer on chicken, topped with bell peppers, green onions and avocado.
Top with more chive and sour cream dip and sprinkle the remained cheese over it.
