Whenever I talk about soup or make soup, I get flashbacks to the Soup Nazi episode from Seinfeld (don't ask). Things got a bit coool this last week in Texas, I even pulled out my boots over the weekend. When things start to cool down, I get a bit obessessed with soups. I am not one of those people that believes soups should only be limited to cold weather seasons, but I find it to be a perfect compliment to Fall. I love a good, hearty soup with chunks of meat and vegetables. Forget baked goods, soups are the ultimate comfort meal for me. This sausage and bean soup is a personal favorite, it does not require a lot of prep work and can be ready in about thrity minutes.

What you need.

  • 1/2 Onion, diced
  • 2 cups Sausage
  • 2 garlic gloves
  • 1 can tomato sauce
  • 1 1/2 chicken broth
  • 1/2 cup black bean
  • 1/2 pinto bean
  • 1/2 cup mixed vegetable
  • 2 tablespoons of chili paste
  • 1 teaspoon oregano
  • salt and pepper

How To:

In a large sauce pan, heat oil. Add onions and red peppers and cook until vegetable is soft (about 2 to 3 minutes). Then add in the sausage, stir and cook for three to five minutes.

Add in tomatoes, beans, mixed vegetable, chilli paste, seasoning (salt, pepper and oregano) and broth. Turn heat to medium-low and let it cook for about 10 to 15 minutes.

Dish in a bowl and serve with rolls or crackers.
