Baked Pumpkin Pie Oatmeal

I made baked oatmeal y'all (insert happy dance). I know baked oatmeal is not new - its been done before different kinds of way, but I did not even know these existed untilI I saw an episode of diner, drive in and dives - one of the spots featured had a baked blueberry oatmeal on the menu that the locals raved about. I was intrigued. 

I decided to make baked pumpkin oatmeal - it is pumpkin season after all. 

I scribbled down my ingredients - the usual spices that go with pumpkin - nutmeg, cinnamon, ginger. If you are gonna bake it, you need some baking ingredients, right ? - so in went the egg, butter and baking powder. Of course, oats (rolled oats) and the star of the show pumpkin puree. I put everything together, popped it in the oven at 350 degrees for 40 minutes. 

It turned out better than I could have expected. I am very proud of what I created (hence my happy dance). enough talk - here is the recipe for my new favorite dish.

What you need:

  • 1 cup rolled oats.
  • 1/2 cup pumpkin pie puree
  • 1/4 cup sugar
  • 2 tablespoon butter (melted)
  • 1/2 cup of milk
  • 1 egg
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon ginger
  • 1/2 teaspoon baking powder

How to:

Preheat oven to 375 F

In a bowl, combine the oats, sugar, spices and baking powder. Add the pumpkin puree to the oats and combine. In a separate bowl, whisk together egg, milk and melted butter and add into oats and pumpkin. Coat your baking dish with butter or oil, pour the oats mixture into your dish and bake for 40 to 45 minutes at 375 F.                                                      

Garnish with raisins. Serve with a scoop of yogurt and drizzle with honey.

Serves 2 or 3 / 1 hour
