I love pancakes. if it is not yet apparent - it will be as this blog con. The  thing with pancakes though, its the same base recipe, tastes the same, sometimes, I may fold in some blueberries but for the most part its th same old same old. That was until I created this caramelized apple pancake recipe. I had initially made the caramelized apple to go with another dish, but I tried it with pancakes and I have not looked back since them. This is a staple on my brunch menu the few times I invite friends over for brunch and when I have guests in town - I make it a point to pick up some red apples to make sure I can serve them these pancakes and it has never dissapointed. 

The Pancakes

  • 1 cup flour
  • 1 egg
  • 1 cup milk
  • 1 teaspoon salt
  • 1 tablespoon baking powder
  • 1 tablespoon sugar

The Caramelized Apple Part

  • 2 slice bacon , diced
  • 1 tablespoon butter
  • 1 red apple, thinly sliced
  • 1 tablespoon white sugar
  • 1 tablespoon brown sugar
  • 1/2 tablespoon honey
  • 1/4 teaspoon nutmeg
  • 1/4 cinnamon

How to:


 Combine the ingredients in a mixing bowl, whisk together until it is fully combined. If you have some lumps in your mixture, don't worry about it - it helps make the pancakes fluffy.

Brush the pan with some butter or oil; pour in the batter. When I make this, I light the pancakes to be a bit wider so I use a 3/4 cup measuring cup to pour the batter into the pan. Cook until it starts to bubble on top, flip over and cook other side for about 1 to 2 minutes.

Caramelized Apples and Bacon

In a large sauce pan, add bacon and knob of butter. Cook till butter is melted and the bacon juice is extracted,, about five minutes. Once the butter and bacon begins to bubble , add in the apples and the remaining ingredients. Stir together and let it cook down on medium heat, until the apples are softened (about 10 to 15 minutes).
