Jalapeño Goat Cheese Cauliflower Mashed "Potato"

This is a continuation of the menu from our annual friendsgiving potluck dinner - read all about it here. This year I made blackberry cornbread, mushroom and pancetta gravy and today's recipe - jalapeno goat cheese cauliflower mash "potato".  Most of the menu items were on the indulgent side so I decided to throw something healthy into the mix - plus, since this year's friendsgiving dinner was very impromtu - I did not have time to go to the store - so I used what I already had in the fridge.

I have been meaning to try mashed cauliflower for ages, but was quite apprehensive because cauliflower is the one of the veg (along with brussel sprouts) that I think should be banned - but even if you have been under a rock the last year - you will notice cauliflower is having a moment - everything from cauliflower pizza crust, cauliflower "bread" sticks and of course cauliflower mashed "potato". I picked up cauliflower on my last grocery run to make this cauliflower "bread" stick recipe, but then friendsgiving happened and I made cauliflower mashed "potato" instead. Since it was friendsgiving, I decided to add a few things to make it more interesting - enter jalapeno and goat cheese. The entire recipe took less than 30 minutes to prepare and it was a massive hit at the friendsgiving 2014 (yay me). I made another batch on Monday and I have served it with most meals this week - everything from fish to baked chicken - ah.mazing everytime. I am thinking this recipe will be a thanksgiving tradition - just like friendsgiving.

Jalapeño Goat Cheese Cauliflower Mashed "Potato"

What you need

  • 1 medium head of cauliflower
  • 1/4 cup goat cheese
  • 1 tablespoon olive oil.
  • 1 small jalapeño pepper
  • 1/4 teaspoon salt 
  • 1/4 teaspoon black pepper

How To

Clean caulliflower and cut into smaller pieces. Bring water to a boil, add cauliflower and cook until very tender (about 10 minutes). When you have about a minute left to cook, drop in the jalapeño and let it cook with the cauliflower. Reserve 1/2 cup of cooking liquid, drain and transfer jalepeno and cauliflower to food processor, add table spoon oil and a table spoon reserved water and pulse three to four times. Add in goat cheese, salt and pepper and puree until smooth.

Pour mash into bowl and serve. 

Serves 3 to 4 / 30 minutes
