Quick and easy is the theme this week. I am on the road for work for a few weeks , I get to return home on weekends, but with flights landing late on friday night and flying out mid day Sunday - there is barely enough time to get unpacked and repacked - I did not want to spend what little I had at home in the kitchen, but I still wanted something good and homecooked. On friday night, I made this super quick creamy sausage tortrolle. Honestly you will not believe how easy this is - you can save some time by not grating the sausage like I did (that is the food nerd in me), just cube it and feel free to use any kind of pasta you have available - I especially like this with tortrolle, bow tie pasta and shell pasta.
So let me just clarify - because the question always comes up when I share this recipe with friends - I grate the sausage because it cooks faster and the flavor is a little more elevated and because I always use tortolle pasta in this recipe, I never want anything to over shadow the pasta. Now that the food nerd minute is over - here is the recipe.
What you need:
- 8 oz tortolle (or pasta of choice)
- 8 oz smoked sausage
- 1/4 cup white wine
- 3/4 cup cream
- pinch of salt
- 1/4 teaspoon cayenne pepper
- 1 tablespoon parmesan cheese + 1 tablespoon parmesan for garnish
Cook pasta according to package direction. Grate sausage until you have at least 1 cup of grated sausage.
While pasta is cooking, grate sausage until you have at about 1 cup of grated sausage. Heat a skillet over medium heat, add sausage. Cook until the fat begins to render (3 to 5 minutes), stirring constantly. Add in the white wine, turn heat down to low and let it cook for a minute or two.
With heat on low, stir in cream and tablespoon parmesan cheese. Bring to a light boil, stir in cooked tortolle. Season with salt and pepper, as needed. Let it simmer on low heat for 3 to 5 minutes.
Serve immediately and garnish with parmesan cheese
